A Legacy Born from Australian Passion

Prime Aussie Dining was founded in 2008 by Marcus J. Thornton, a Queensland-born hotelier with a singular vision: to create a world-class casino-restaurant complex that could stand alongside the finest establishments in Monaco, Macau, and Las Vegas.

Thornton's initial investment of AUD $47 million transformed a historic 1920s warehouse on Queen Street into a multi-level complex housing three distinct dining experiences, a licensed gaming floor, a subterranean wine cellar, and the city's most celebrated cocktail lounge. The complex was an immediate critical success, earning its first Chef Hat within 18 months of opening.

Over the following decade and a half, Prime Aussie Dining became the venue of choice for Queensland's corporate elite, international dignitaries, and discerning travellers — a reputation built entirely on consistency, discretion, and an absolute refusal to compromise on any standard.

Prime Aussie Dining opened in October 2008, founded by Marcus J. Thornton following a AUD $47 million transformation of a historic 1920s Queen Street warehouse. The complex earned its first Chef Hat Award within 18 months of opening.

Our Executive Head Chef is Adrian Whitmore, a three-time Chef Hat laureate who trained under Heston Blumenthal at The Fat Duck and Tetsuya Wakuda at Tetsuya's Sydney. He is widely regarded as a pioneer of contemporary Australian native ingredient cuisine.

Yes. Our gaming operations are conducted under Gaming Licence QGL-2019-4827-B issued by the Queensland Office of Liquor and Gaming Regulation (OLGR). All gaming activities comply fully with the Gaming Machine Act 1991 (Qld) and all associated responsible gambling regulations.
